The Yellow Pitaya or Yellow Dragon Fruit is a epiphytic cactus, native to Central and South America. It has a yellow skin and transparent flesh. It is very rare and is only known to be commercially cultivated in Columbia. Pitaya fruit is produced on a segmented, vine-like climbing cacti. These plants have extensive aerial roots and originally existed as epiphytes. The aerial roots are used to attach themselves to supports for climbing and the cactus uses these roots to find nutrients in cracks where organic material concentrates. The Yellow Dragon Fruit is smaller than the more common pink and red Pitaya. They contain prominent spikes until ripening time, upon which the spikes drop off. The small fruits are yellow on the outside with a sweet transparent flesh on the inside. The fruit have an unequalled sweet flavour.
